Tailgate Turkey Burger and Fajita Sweet Potato Fries

I’m not a big football fan (unless my son is playing), so anytime I’m actually watching a game, I am probably just there for the party food.

Since, I’m trying to eat healthier in the New Year, I will be submitting My Tailgating Turkey Burgers with Guacamole Relish and Fajita Sweet Potato Fries with Guacamole Dipping Sauce.   It tast
 

Ingredients:

2 Sweet potatoes-peeled and sliced
6 Turkey Burger Patties
6 Multi Grain Sandwich Thins
2 Large Avocados
3 Roma Tomatoes
1/2 red onion
 Olive Oil
Fajita Seasoning
1 clove Garlic
 Lime juice
Hot Sauce
1 fresh jalapeno pepper-seeded and diced
Lettuce
Peel and slice the sweet potatoes.  Toss with 1 Tb olive oil and 1 tsp. fajita seasoning.  Bake on a cookie sheet @ 425 for 15 minutes. Stir and return to oven for an additional 10 minutes.

Place Turkey patties on grill and sprinkle with fajita seasoning.

While patties are cooking, prepare dipping sauce. Blend together 1 avocado, 1/3 cup lime juice, 1/2 tsp. salt, 1 dash hot sauce.  Blend until smooth.

Prepare Guacamole relish.  Press one clove of garlic.  Add to 3 Tb of lime juice. Add 2 diced Roma tomatoes, 1 diced avocado, chopped red onion,and 1 tsp. salt. Set aside.

To assemble: Place patty on sandwich thin.  Top with a generous spoonful of relish and a few leaves of lettuce. Serve with fries and dipping sauce. 
It tastes so good,  you won't feel like you are eating healthy.  That's the best kind of party food.
